Fenugreek (Trigonella foenum-graecum) is one of the primary flavours that form the foundation of many Indian curries.  It is a staple of Middle Eastern, Ethiopian, Yemeni and Indian cookery, and popular in Turkish, German, and American cooking. It is also the main seasoning used in hot dog sausages. Our Indian fenugreek has a lovely maple syrup aroma.

Fenugreek is a bitter spice used commonly in meat and vegetable dishes. Fenugreek takes on a somewhat nutty and sweet taste when the whole seeds are sautéed in oil or grilled in a hot, dry pan. Its aroma particularly compliments many vegetable recipes.The seeds can also be added to quick wok-fried cauliflower or cabbage dishes with chillies and herbs or crushed with sea salt for an impromptu dry rub for pigeon or duck breasts. Try frying fenugreek in a little oil or ghee with cumin and mustard seeds prior to adding your vegetables.

Fenugreek leaves, also known as menthi, are also used in Indian cookery as well.

It's also said that fenugreek seeds are good for the digestion - simple add some seeds to a cup of boiling water, allow to steep then drink.

Épices De Cru began in 1982 as a catering partnership between Philippe and Ethné de Vienne.
