Malabar Black Pepper
This special blend of the very best grade varieties of black pepper from Malabar (India's pepper homeland) is ideal for everyday use in your pepper mill. A unique blend of the very best grade, and different varieties, of black pepper grown along the Malabar South Coast, India's real pepper homeland. A perfect, aromatic everyday bend for your pepper mill. Since antiquity, pepper has been traded and blended in the Malabar region of India. Wild pepper vines can still be found growing in the surrounding jungles. The region’s two annual monsoons and millennia of production and blending makes Malabar the perfect climate for cultivating pepper.

Malabar White Pepper
A well-balanced white pepper blend that features a much milder fermented taste than most run-of-the-mill white peppers.  All peppers come from pepper vines that originate in southern India. Some of the world’s most respected peppers are harvested along southern India’s Malabar Coast, hence the moniker Malabar Pepper.  Our Malabar White Pepper takes is inspiration from millennia of expert pepper blending on India’s spice coast. Each year, master blenders inspect the year’s harvest and combine those peppercorns that will provide the most consistent and pleasing taste for Malabar Peppers sold around the world. White Pepper’s unique processing makes it much hotter and removes many of black pepper’s sometimes overpowering aromas. This makes it a common ingredient in Chinese cooking, and a necessary part of many European dishes and French sauces. Try it in delicate chicken dishes and Asian-style sweet and sour pork.

Épices de Cru began in 1982 as a catering partnership between Philippe and Ethné de Vienne. Their mission was a kind of “cooking pot anthropology:” learning the secrets of family cooking around the world and applying these techniques to the needs of hungry Montrealers. The secret, they learned, was spices. Over the last two decades, Philippe and Ethné have searched for the world’s best spices, accompanied by their children, Marika and Arik. The de Viennes believe in direct sourcing spices: visiting growing regions, spending time with growers, and developing personal relationships that last decades. In 2004, they officially opened their first spice shop in Montreal’s fantastic Jean Talon market– it’s since become a mecca for foodies from all over the world. I first visited in 2008 and have been buying and using their spices on a regular basis ever since that first exciting visit. They steadfastly maintain that they do nothing original, only facilitating the exchange of culinary common sense from one place to another.
