Épices de Cru Gaspesian Salmon Rub


In a nutshell:  Add some authentic Quebec maritime flavours to your salmon steaks with this intriguing rub.

This wonderful blend combines white pepper, coriander seeds, mustard seeds, as well as wild, indigenous plants from Québec’s Gaspé peninsula such as comptonia and wild Gaspésian pepper gathered from the bogs and Boreal forests of the region, a beautiful area of rugged cliffs along the shores of the Saint Lawrence River larger than Belgium at over 11,000 square miles! It also includes Labrador tea leaves which add a sweet freshness to the blend. It is best used with fish, especially salmon or trout. Simply rub over the fish and grill, pan-fry or roast for some really delicious flavours.

Épices de Cru began in 1982 as a catering partnership between Philippe and Ethné de Vienne. Their mission was a kind of “cooking pot anthropology:” learning the secrets of family cooking around the world and applying these techniques to the needs of hungry Montrealers.
