I've always used these favourite small carbon steel paring knives from Dehellerin, a catering store and Paris institution on Rue Coquilliere in Les Halles, that has refused to change over the decades. It's still crowded and precarious as you walk round, trying not to knock things over and the staff always remember you even if you have not visited for a year or two. When in Paris, I pop in to buy these knives to take home as gifts. Easy to keep sharp and perfect for all kinds of kitchen uses. The smaller one has a 7cm blade ideal for peeling potatoes and other vegetables; the larger one has a 9cm blade and works well for dicing all vegetables precisely. Both will become indispensable in the kitchen and provide years of heavy duty usage.
