One of the hottest dried chillies in the world, not to mention one of the tastiest. Bhut Jolokia (also known as ‘ghost chilli’) is grown exclusively in the Indian state of Assam where they say that “it stings like a wasp”! Three times hotter than the Habanero, with a whopping potency of 28/10 on the Scoville scale, the colour and shape of the Bhut Jolokia pepper also resembles the Habanero although it has a more smoky and intense flavour. You may want to handle this pepper with gloves and discretion! Use small amounts of these Bhut Jolokia flakes added to curry dishes, salsas or any meal that calls for powerful heat and deep flavour where its penetrating aroma can take affect. In India, they smear fences with Bhut Jolokia to deter rogue elephants from entering gardens!
