This dried Kaffir lime peel comes from Madagascar and has a delicate, efflorescent citrus flavour. The peel (or zest) is much milder than the typical lime but is used in much the same way. It presents an intense citrus bouquet with the bittersweet background often associated with lime zest. The Kaffir lime is a tree that originates in Southeast Asia. Its fruit, leaves and peel are found almost everywhere in the cuisines of Thailand, Cambodia, Laos, Mauritius, and Réunion. The dried peel is generally rehydrated before use, often in red or green curry pastes. It can also be ground then added, in small quantities, to soups, stir-fries, poultry and seafood dishes. It’s a spice that pairs brilliantly with ginger, lemongrass, or galangal. Perfect also for adding to vinaigrettes, sauces and cocktail and pastry syrups.
