In a nutshell: This all-purpose Maple blend can be “rubbed” on whole chicken, meat cubes, tofu, or ribs – before cooking.

This maple rub is the “ultimate solution” spice blend, composed of mild, hot and smoky chillies, with a hint of onion and cumin. We added Quebec maple sugar, which encourages a delicious caramelisation during cooking. Also serves as a great base for a marinade or a delectable home-made BBQ sauce.

How to use

  • To make Maple BBQ Pork ribs, rub the meat with the Maple Rub. Let rest refrigerated for a few hours or overnight before grilling or cooking in oven slowly for 1 1/2 hours or more until tender.

Épices de Cru began in 1982 as a catering partnership between Philippe and Ethné de Vienne. Their mission was a kind of “cooking pot anthropology:” learning the secrets of family cooking around the world and applying these techniques to the needs of hungry Montrealers.
