This rare wild pepper from Madagascar is being discovered by adventurous chefs to add to dishes on their menus. Wild Voatsiperifery Black Pepper (piper borbonense), distinguishable by its curved tail, is a truly unique wild Cubeb pepper sourced from Madagascar. Despite its rarity, many adventurous chefs are discovering the joys of its incredibly aromatic and complex flavour profile and using it in their recipes. Like Cubeb, Black and Long peppers, Voatsiperifery is a true pepper from the piperaceae family of climbing pepper vines. The woody and floral fragrance of these dense red-brown peppercorns evoke citrus fruits and give an exciting tongue-numbing sensation when crunched in the mouth. It has been a secret ingredient in the Madagascan kitchen for centuries but hard to get hold of in the West. Try seasoning meat and poultry, fish and seafood with it or combine into chocolate desserts where its subtle sweetness and moderate heat add some depth of flavour. We use it when cooking pepper squid or grilling scallops and make a dry rub with orange zest, ginger and Voatsiperifery Wild Pepper to put on our duck or chicken breasts when pan-frying.
Voatsiperifery Wild White Pepper
This rare wild white pepper from Madagascar is brilliant with fish, meat, chicken and even chocolate dishes. A very rare and unique pepper, with a hot, woody fragrance. Voatsiperifery is a small, tailed pepper that comes from Madagascar. To make white pepper, the berries are harvested at full maturity, then soaked in water until they lose their outer layer. The small white berries develop a fruity aroma- more delicate and less camphorous than Black Voatsiperifery- and lack the fermented notes that characterize certain white peppers. It can be used alone or blended with other peppers, in all kinds of dishes: meat, poultry, fish, or even with chocolate-based dishes.
Voatsiperifery Wild Red Pepper
Harvested at full maturity, rare and extremely aromatic! This tailed pepper grows wild on the island of Madagascar. Each berry is harvested by hand from vines reaching up to 20 meters high. In order to preserve this unique peppercorn’s delicate red colour, the berries are left to ripen on the vine longer than usual. The resulting aroma is incomparable. Fruity, woody notes with citrus overtones make this pepper a great choice for chocolate, strawberry or pineapple desserts. When blended with other peppers, it is great on red meat and game. Best added later in cooking, since cooking Red Voatsiperifery for too long can bring out some bitterness in the spice.
