In a nutshell: One of our our favourite Greek herbs, with a wonderful menthol scent, simply add in small quantities to pie mixes and sauces or use as a tea.
Pennyroyal (fliskouni) is a well-known herb in Greece where it is used both as a herbal tea and a culinary herb, added to tomato sauces, meatball mixes, Dolmades (stuffed vine leaves) and pie mixes. Very aromatic, it was widely used in Ancient Greece and Rome and int he Medieval period. Try it and you'll be surprised by the intensity of its mint and menthol flavour.
How to use:
- You’ll need 1 heaped teaspoon per tea cup. Simply simmer in lightly boiling water for 5 minutes or infuse with boiling water for approximately 5 minutes. Strain and serve alone or with honey.
- Add to spanakopitta (spinach pie) mixes.
- Make a sugar syrup with it to use for desserts and sweet pastries.
- Sprinkle into your tomato pasta sauces and meatball mixes.
Note: It should not be used during pregnancy and lactation.
