Roasted Aubergine Dip


In a nutshell: This jar of roasted and crushed aubergines is a perfect pantry staple that can be used to make classic Mediterranean and Middle eastern-style dips.

Grown on a small farm in the Peloponnese region in Greece, these aubergines are roasted and crushed immediately after picking on the same day to retain their freshness and nutritional value. Free of all  artificial preservatives.  

Delicious and versatile, the purée can be used to form the basis of melitzanosalata (the famous Greek aubergine dip) with the simple addition of freshly squeezed lemon juice, sea salt, black pepper and extra virgin olive oil or as a delectable dip for fresh vegetables. Also use as a base for vegetable curries, sauces and stews.

How to use:

  • Make an easy Baba Ganoush aubergine dip by combining this jar with 2 tbsp tahini, 2 finely crushed garlic cloves, juice of 1/2 a lemon, 2 tbsp finely chopped flat leaf parsley and sea salt and black pepper. 
  • Use to make a filling with crumbled feta and chopped herbs for filo pastries.
