In a nutshell:  A rare and unique cardamom, with a very strong, refreshing aroma.

This Ethiopian cardamom (Aframomum corrorimais harvested in the wild coffee forests in Kafa, a UNESCO biosphere reserve, in the southwest of the country. The large, brown pods are dried near an open flame, conferring a slightly smoky flavour. In Ethiopia, it’s used in spice blends like our Ethiopian Bérberé and in stews, most commonly with meat. It’s also a common addition to Ethiopian coffee. As with green cardamom, it’s as nice in savoury dishes as it is in sweet- particularly desserts with coffee or chocolate. Our Ethiopian cardamom is pre-shelled, but sold with the whole grains intact.

How you use:

  • Try it in Indian Kulfi ice cream.
  • Make Niter Kibbeh an Ethiopian spiced butter made also with garlic, ginger,  onion, turmeric, fenugreek, fennel and oregano and butter that is cooked a low heat for 20 minutes. The clarified butter is then strained into a jar and used in many classic Ethiopian dishes.
  • Use when making Maafe chicken in peanut sauce
  • Substitute it for green cardamom when making a coconut and cardamom cake

Épices de Cru began in 1982 as a catering partnership between Philippe and Ethné de Vienne. Their mission was a kind of “cooking pot anthropology:” learning the secrets of family cooking around the world and applying these techniques to the needs of hungry Montrealers. The secret, they learned, was spices. Over the last two decades, Philippe and Ethné have searched for the world’s best spices, accompanied by their children, Marika and Arik.
