Dill (Anethum graveolensis a herb mostly commonly associated with Germany, Scandinavia, and Western Europe. It’s also popular as far as Turkey and even Vietnam. Crucial when giving the distinct flavour to dill pickles. Although we mostly use fresh dill nowadays, dried dill seeds impart far more flavour to all kinds of sauces and dips.

Dried dill has a fresh, herbal aroma that recalls parsley, fennel, and caraway. It has a less pronounced aniseed flavour than fresh dill. The seeds are a great way to flavour salad dressings, egg dishes, or any kind of poultry. Dill really shines on fish and seafood. It’s also the ideal herb for flavouring a dip made with yogurt or sour cream or adding to Greek tzatziki.  Dried dill is also a great way to flavour soups, pickles, and all sorts of vegetables.

How to use

  • Make a dill vinaigrette by combining dill with olive oil, red wine vinegar and sea salt - perfect for salads, eggs and fish.
  • Use when making classic Dill Pickles.
  • Add to a Gravlax spice rub.

Épices de Cru began in 1982 as a catering partnership between Philippe and Ethné de Vienne. Their mission was a kind of “cooking pot anthropology:” learning the secrets of family cooking around the world and applying these techniques to the needs of hungry Montrealers. The secret, they learned, was spices. Over the last two decades, Philippe and Ethné have searched for the world’s best spices, accompanied by their children, Marika and Arik.
