In a nutshell: This white pepper from Sumatra has a bold flavour with a clean, hot bite.  Perfect for classic cream sauces and Asian dishes.

This White Indonesian pepper from Sumatra is prepared according to traditional fermentation methods.  

After harvesting, the pepper berries are placed in sacks while the pericarp, or outer layer, ferments. It is rinsed and changed several times. Once the pericarp is removed, the remaining white peppercorn has a concentrated bite. Our white pepper is unbleached and still retains a slightly off-white hue. 

White pepper is the perfect addition of hotness without changing or overpowering the flavour of your dish. 

Sumatran White pepper is flavourful enough to add to most recipes. It is the pepper of choice in Chinese cuisine. In Southeast Asian cookery, white Indonesian pepper is paired with kaffir lime and lemongrass. White pepper is also ideal for classic cream sauces and other light-coloured dishes like mashed potatoes.

Épices de Cru began in 1982 as a catering partnership between Philippe and Ethné de Vienne. Their mission was a kind of “cooking pot anthropology:” learning the secrets of family cooking around the world and applying these techniques to the needs of hungry Montrealers. The secret, they learned, was spices. Over the last two decades, Philippe and Ethné have searched for the world’s best spices, accompanied by their children, Marika and Arik. In 2004, they officially opened their first spice shop in Montreal’s fantastic Jean Talon market– it’s since become a mecca for foodies from all over the world. I first visited in 2008 and have been buying and using their spices on a regular basis ever since that first exciting visit. They steadfastly maintain that they do nothing original, only facilitating the exchange of culinary common sense from one place to another.
